According to an old saying, wines from Toro are so big they need to be eaten with a knife and fork. Indeed, Cyan has produced a delicious Crianza from from 30-year-old vineyards in the Finca de la Calera--the extreme western border of the Toro appellation--that is a big, mouthful of a red with gobs of ripe fruit accented by barrel spice.

By fermenting this one in stainless steel, Cyan preserved the bright berry aromatics, too, giving the finished wine a more primary, elegant lift compared to other reds from the region. Aged for 12 months in a combination of American oak and French barrique, the 2014 Cyan Crianza does not require a knife or a fork to enjoy, though we do recommend you drink this young wine with stick-to-your-ribs dishes based on beef or pork.
